We would like to give you a glimps of a true culinary final exam. This exam is part of FSER 72, Buffet Preparation. The course puts the focus on Garde Manger skills and the examiners are Executive Chefs from some of the best kitchens on Maui. They give of their time freely to encourage, instruct, and express the high standards that our students will be expected to meet.
